Dadi Maa's Loose Hing Legacy

Our matriarch, Shrimati Gyanwati Devi (affectionately known as Dadi Maa), began compounding raw asafoetida tears in a small village kitchen in Northern India. Hand-pounding the resin in stone mortars, she removed rocky impurities and sold pure Hing loosely to her community — rejecting the wheat flour dilution common even in local markets. This recipe became the gold standard of culinary purity in her neighbourhood.

Mittal and Company — Retail Heritage

As word of Dadi Maa's intense, chemical-free Hing spread across generations, the family channelled this tradition into a retail store: Mittal and Company. Operating from 1980 to 2020, the store supplied pure Hing to families, local chefs, and community kitchens. Its reputation was built purely on word-of-mouth — the unmistakable aroma of genuinely pure, filler-free asafoetida.

To take this purity nationwide, the family formally registered the SATTVAA brand in 2020 under SM Global. Sourcing Raw Tears from Wild Mountain Ridges

The secret to a 100-year-old aroma lies in geographic selection. Real Hing cannot be cultivated in commercial crop plains. It is harvested from wild Ferula plants that grow in rocky, cold, high-altitude mountain soils.

Every year, our experienced sourcers travel to high mountain passes to hand-select the purest resin tears. As the roots are slit, a milky, aromatic sap oozes out, drying into hardened golden resin crystals. These raw crystals are shipped directly to our facility, where they are checked crystal-by-crystal to discard moisture-logged sap, leaving only concentrated purity.

OUR SECRET CRAFT

Slow Jar Curing & Small-Batch Pounding

To lock in the volatile essential oils that give SATTVAA its therapeutic properties, we reject standard high-speed steel milling. High-speed grinding generates friction heat, which evaporates the natural aroma of the resin, leaving a flat, powdery substance.

Instead, we place our sorted resin tears inside large traditional clay jars to cure slowly under indirect sunlight. Once cured, the Hing is crushed in small batches using slow-speed grinders. This ensures that the natural oils remain locked inside each golden grain. The resulting compounded Hing is highly concentrated, meaning a tiny pinhead pinch is enough to scent a large pot of Dal.
